Bananas travel from Ecuadorian packing stations to US ports in high-tech refrigerated containerships sealed at exactly 56.5°F. One degree cooler triggers peel graying and ruins the batch; two degrees warmer triggers uncontrollable ripening and shipboard spoilage. Once landed in ports like Wilmington, DE or Long Beach, CA, fruit is rushed to pressurized RDC ripening vaults where ethylene gas is injected to turn them from dark green to stage-3 bright yellow right before hitting retail shelves.
